When they were discovered, the Azores were a port of scale of the caravels that were coming from East. Maybe for this reason, the culinary azoriana resorts to diverse spices, due to the many spices that here were in use during this time.
In the Azores the fish and the shellfish, abundant for these places, takes an important place in the gastronomy of the region. The islands have fishing traditions, though, for what in all can be taste the freshness of the fish. The Azores have seafood that will not be finding in any other place, as the cracas or the cavaco, species of tender and tasty lobster. In Terceira the alcatra stands out, well flavoured.
You cannot leave without tasting the speciality, the wines of the land. If the verdelho is most known, there are others to order, as the red and white wines of Pico, of Graciosa or Terceira. And the dessert has the unmistakable flavor of the pineapple or other sweet fruits that are cultivated in the Azores.
